Baked Figs with Goat Cheese

Ingredients
8 Figs (ripe but firm)
3oz Soft Goats’ Cheese
Mint leaves, approx. 8 leaves. Basil is also a nice substitute.
Extra Virgin Olive Oil

Directions
Pre-heat oven to 375 F. Cut a deep cross into the top of each fig, but without cutting through the bottom. Scoop a teaspoon-full of goats’ cheese into each fig, and add a mint leaf to the top. Place the figs on a baking tray and drizzle with extra virgin olive oil and add salt and pepper. Bake for 10-12 minutes, until the figs are soft and the cheese has melted a little. Figs can also be served on a bed of leaves like arugula or watercress.
