Tomatoes, chopped
Cilantro, chopped
Red onion, chopped
1 fresh jalapeno, seeds discarded
Sea salt & pepper
Freshly squeezed lime juice (2-3 limes)

Lima crema
Sour cream
Freshly squeezed lime juice (2 limes)

Pickled Red Onions and Radishes: Toss red onion and radishes into a bowl with lime juice and refrigerate. Best if  done a day ahead of time, but a few hours will work as well.

Flank Steak: Combine cilantro, lime juice, olive oil, and sea salt in shallow bowl. Add the flank steak and let marinate 30 minutes before cooking.

The steak is best when grilled, but it can also be cooked on a non-stick pan. Sear each side of the steak at a high heat, then reduce to medium heat to cook through. Take steak off heat, let rest and slice diagonally.

Salsa: Chop all ingredients, mix together and you’re good to go!

Guacamole: Mash avocados roughly in a bowl. Add the rest of the ingredients and continue to mash together until well mixed.

Lima Crema: Mix sour cream, juice of 2 limes and salt and pepper to taste. Stir and enjoy.

Right before plating food cook corn tortilla’s over the flam on your stove top for a couple seconds.  Keep your eye on them so as not to burn!

Ok my mouth is officially watering.  Thanks, Roanne!
