Slice 2 large pieces of bread and sprinkle generously with olive oil. Broil for a few minutes. Peel a garlic clove and rub generously over the hot toast.
Then your canvas is set… Add parsley, chopped tomatoes, and thinly sliced avocado. Sprinkle with more olive oil, Maldon salt, red pepper flakes and freshly ground black pepper. Squeeze lemon to finish.
A few olives on the side and a nice cold glass of lemony/orange water. Done.
