Nourish’s Signature Roast Chicken

NKT's Signature Roast Chicken rubbed with garlic, herbs, lemon zest & harissa powder... can we get a what what?

Here’s how we know this roast chicken (illustrated by watercolor wunderkind What Katie Drew) is even more delicious than it looks: it comes from the West Village kitchen of nutritionist Marissa Lippert of  Nourish Kitchen + Table. Right about now is the time when most of us stare longingly at our oven, secretly missing the days of a meat and three veg roast situation. No time like the present so enjoy!

NKT’s Signature Roast Chicken

Ingredients:
Makes 4 servings

2 pounds split breasts, bone-in, skin-on
Extra virgin olive oil
2 garlic cloves, minced
1 1/2 tsp NKT’s secret harissa spice blend (based on a blend of cumin, coriander, red pepper flakes, paprika)
4 sprigs fresh thyme
Kosher salt
2 lemons
Dried rose petals, if desired (These are usually available at Middle Eastern specialty stores)

Directions:
Drizzle olive oil over chicken breasts and rub with garlic, spice blend and thyme directly on skin. Place a few lemon slices on top of chicken.

Roast at 400 for 20 minutes and then reduce heat to 375, roasting for another 25-40 minutes until good and crisp and colorful. Lemon slices should be slightly browned/charred.
Garnish with dried rose petals.
