Quinoa with Shiitake Mushrooms & Salad

Ingredients:
2 handfuls of shiitake mushrooms
1 cup of quinoa
1 tablespoon of coconut oil
1 bushel of arugula
As many avocados as you can afford
1 grated carrot
A lot of grated parmesan
1 handful of chopped chives
1 handful of cilantro
1 handful of fresh basil
1 clove of fresh garlic, diced finely
A handful of sesame seeds
olive oil
A splash of apple cider vinegar
A pinch of salt

Directions:
1. Sauté mushrooms in coconut oil for 3-5 minutes
2. Boil quinoa and strain
3. Prepare salad ingredients
4. Massage everything together with your hands
5. Lick your fingers, voíla!
