Baked Figs with Goat Cheese by Catherine Newell-Hanson
Pre-heat oven to 375 degrees (F)
Cut a deep cross into the top of each fig, but without cutting through the bottom. Scoop a teaspoon-full of goats’ cheese into each fig, and add a mint leaf to the top
Place the figs on a baking tray and drizzle with extra virgin olive oil. Add salt and pepper to taste.
Bake for 10-12 minutes until the figs are soft and the cheese has melted a little.
