Baked Figs with Goat Cheese

  1. Pre-heat oven to 375 degrees (F)

  2. Cut a deep cross into the top of each fig, but without cutting through the bottom. Scoop a teaspoon-full of goats’ cheese into each fig, and add a mint leaf to the top

  3. Place the figs on a baking tray and drizzle with extra virgin olive oil. Add salt and pepper to taste.

  4. Bake for 10-12 minutes until the figs are soft and the cheese has melted a little.

  • 8 Figs (ripe, but firm)
  • 3 oz of soft goat cheese
  • 8 mint leaves
  • Extra virgin olive oil
