Fried Egg Quinoa by Louise Chen
Steam red and blond quinoa with dried tarragon and fennel seeds
Leave the cooked quinoa in the fridge for 30 minute to dry out some of the moisture.
Add a spoonful of olive oil to a pan, fry onions until lightly brown, add pancetta and pine nuts and fry until caramelized.
In a wok, scramble 2 eggs in sesame oil, add cold quinoa, stir fry for 5 minutes.
Add onions, pancetta and pine nuts to the stir fry and stir together
Add a bit of light soy sauce
Add fresh cut chives, serve with lime
Total Time 15 min
